AbstractThe National Dietary Survey of Schoolchildren was conducted in conjunction with the Health and Fitness Survey of the Australian Council for Health, Physical Education and Recreation Incorporated (ACHPER). Its main aims were: to determine food consumption and nutrient intake of Australian schoolchildren aged 10 to 15 years in both rural and urban areas; to collect national data on children's diets to develop nutrition policy and associated nutrition education and other programs for this population group; to collect biochemical data on the iron status of boys and girls aged 9, 12 and 15 years in the population group; and to correlate iron status of boys and girls aged 12 and 15 years with dietary intakes of iron in population subgroups. Basic measurements of upper arm circumference, height, weight and blood pressure were taken from each respondent. Background information collected included: sex, age, state of residence, country of birth, parents' country of birth, length of residence in Australia, language spoken at home, how frequently the respondent consumed alcohol and whether the respondent ate before going to school. A 24 hour dietary and beverage intake schedule was also completed with the assistance of a trained interviewer.

Methodology Content
Sampling Proceduremulti-stage sample with quota The first stage of sample selection involved the selection of schools. The sampling frame used was from the Australian Council for Educational Research for both primary and secondary schools. The sampling frame included State and independent schools. Schools were chosen with a probability proportional to the numbers of students aged 10 years in primary schools and 14 years in secondary schools. The schools were drawn from the respective sampling frames by means of a random-start constant-interval procedure. Each sampling frame was arranged in ascending postcode order which ensured a good geographical spread of the selected schools throughout Australia. A replacement school was also chosen for each sample school to enable substitution in the event of a school's refusal to participate in the surveys. The replacement school was the next school, of that type, in postcode order. The second stage, the student sample, was drawn at random, from the total school enrolment. The schools provided enrolment lists containing name, sex, grade and date of birth for all students at the school. Students' names were categorised by age and sex, with date of birth used to calculate each student's age at 30 June 1985. This date was chosen as being in the centre of the planned data collection period and because it is the date used in several general enrolment statistics available for Australian students. Fifteen students were sampled for each age/sex category using a systematic process, from the school enrolment information. This included five additional students, in each age/sex group to allow for illness, incorrect enrolment data, school transfers and refusals among the first ten selected. The design sample contained 104 schools, 52 primary and 52 secondary with the final number of schools being 109. Four of the additional schools were chosen to match the single-sex schools in the original sample, the other because one of the country primary schools proved to have a very low enrolment. The dietary survey included only children aged 10-15 years who agreed to physical testing as part of the fitness survey carried out by ACHPER. It was felt that those children aged 7 to 9 years who also took part in the ACHPER survey would not be able to complete the dietary recall information adequately to be included in the dietary survey.

Mode of Data Collectionself-completion (distribute - collect) clinical test After height, weight and other physical measurements were taken, children were instructed in the use of the dietary recall form. The students, in groups of four or five, were given a record diary by a data collector and show how to record their food intake with practical examples of food measurement. The 24 hour recording period started at the end of the briefing session. At least 24 hours later, each student was interviewed individually and record books were checked so that the students could confirm that all food and drink consumed had been recorded and to clarify incomplete and illegibile information.
